Charred Sevaiiya Noodle Salad
A flavorful and refreshing salad made with charred Sevaiiya noodles, mixed with vibrant Peruvian ingredients.
Ingredients
- β250g Sevaiiya noodlescooked according to package instructions
- β1 medium Charred red onioncharred in a pan with some oil
- β2 Diced vibrant bell peppersany color
- β1/4 cup Chopped fresh cilantrochopped fresh
- β2 Chopped Peruvian aji amarillo peppersseeded and chopped
- β2 tbsp Lime juicefreshly squeezed
- β1 tbsp Extra virgin olive oilfor dressing

Cook the Sevaiiya noodles according to package instructions. Drain and set aside.

Char the red onion in a pan with some oil until it's caramelized.

Dice the bell peppers and chop the cilantro.

Seed and chop the aji amarillo peppers.

In a large bowl, combine the cooked noodles, charred red onion, bell peppers, cilantro, and aji amarillo peppers.

In a small bowl, mix together the lime juice and olive oil.
