Charred Noodle Stir Fry
A spicy and savory stir-fry made with charred noodles, tossed with vegetables and a hint of Jiangsu flavors.
Ingredients
- β8 oz Charred noodles
- β2 tbsp Jiangsu sauce
- β1 Pillowy egg
- β1 tsp Dan dan sauce
- β1 tbsp Vegetable oil
- β1/4 cup Green onions
- β1 tsp Sesame seeds
- β1 tsp Soy sauce
- β1 tsp Sugar
- β1 tsp Ginger
Instructions

Heat the vegetable oil in a wok or large skillet over medium-high heat.

Add the charred noodles and stir-fry for 2-3 minutes, until they start to soften.

Add the Jiangsu sauce, dan dan sauce, soy sauce, sugar, and ginger. Stir-fry for another 2-3 minutes, until the noodles are well coated.

Push the noodles to one side of the wok. Crack in the pillowy egg and scramble it until it's cooked through.

Mix the egg with the noodles.

Transfer the noodles to a serving platter. Garnish with green onions and sesame seeds.
