Norwegian Beef Soup
A hearty and comforting beef soup inspired by Norwegian cuisine. Velvety texture and rich flavors make this dish perfect for a chilly evening.
Ingredients
- β1 pound, cut into 1-inch pieces beef shinChoose a cut with good connective tissue for a rich broth
- β1 medium, chopped onion
- β2 medium, chopped carrot
- β2 stalks, chopped celery
- β1 cup, sliced mushroomButton or cremini work well
- β4 cups beef brothHomemade or store-bought, low-sodium
- β1 tablespoon velvetyMayonnaise or sour cream work as substitutes
- β1 teaspoon dried thyme
- β1 teaspoon salt
- β1/2 teaspoon pepper

1. In a large Dutch oven or pot, heat 2 tablespoons of oil over medium-high heat.

2. Add beef and cook until browned, about 5 minutes. Remove from pot and set aside.

3. Add onion, carrot, and celery to the pot and cook until softened, about 5 minutes.

4. Add mushroom and cook until tender, about 3-4 minutes.

5. Add beef broth, browned beef, thyme, salt, and pepper to the pot.

6. Bring to a boil, then reduce heat to low and simmer, covered, for 1 1/2 hours.

7. Stir in velvety and let soup cool slightly.

8. Use an immersion blender to puree soup to desired consistency.
