Yautia and Mexican Velvety Soup
A hearty and creamy soup blending the flavors of yautia and mexican cuisine.

- β2 large yautiapeeled and chopped
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup Mexican cremavelvety
- β4 cups chicken brothlow sodium
- β1 tsp cuminground
- β1 tsp paprikasmoked
- βto taste salt
- βto taste black pepper

Instructions

Heat oil in a large pot over medium heat.

Add chopped onion and cook until softened, about 5 minutes.

Add minced garlic and cook for 1 minute.

Add chopped yautia, cumin, and paprika. Cook for 2-3 minutes.

Pour in chicken broth and bring to a boil.
