Ethiopian Apricot Stew
A flavorful and comforting stew made with tender lamb, sweet apricots, and spicy Ethiopian spices.
Ingredients
- β1 1/2 pounds Lamb ShoulderBone-in
- β1 cup ApricotsDried
- β1 medium Onion
- β3 cloves Garlic
- β2 inches Ginger
- β2 tablespoons Ethiopian Berbere Spice
- β2 tablespoons Vegetable Oil
- β1 teaspoon Salt
- β1/2 teaspoon Black Pepper

Heat oil in a large Dutch oven over medium-high heat.

Add lamb and cook until browned, about 5 minutes.

Remove lamb and set aside.

Add onion and cook until softened, about 5 minutes.

Add garlic and ginger and cook for 1 minute.

Add berbere spice and cook for 1 minute.

Add lamb back to pot and add apricots, salt, and black pepper.

Pour in enough water to cover the lamb and bring to a boil.

Reduce heat to low and simmer, covered, for 1 1/2 hours, or until lamb is tender.

Serve stew hot, garnished with fresh cilantro if desired.
