Polish Potato Pancakes
A classic Eastern European dish made with grated potatoes and served with a side of velvety sour cream. Crispy on the outside and fluffy on the inside, these pancakes are a delicious accompaniment to any meal.
Ingredients

- β4-6 pancakesstore-bought or homemade
- β1/2 pound polish sausageoptional
- β1 medium onionfinely chopped
- β1 large egg
- β2 cloves garlicminced
- βto taste salt
- βto taste pepper
- β1 cup velvety sour creamfor serving

Grate the potatoes and squeeze out as much liquid as possible.

In a large bowl, combine the grated potatoes, chopped onion, minced garlic, salt, and pepper.

Add the egg and mix well.

Heat a large frying pan with about 1/2 inch of oil over medium-high heat.

Using a 1/4 cup measuring cup, scoop the potato mixture into the pan and flatten slightly.

Cook for about 4-5 minutes on each side, until crispy and golden brown.

Serve hot with a dollop of velvety sour cream.

If using polish sausage, cook according to package instructions and serve on top of the pancakes.
