Quinoa Delight Bowl
A healthy and flavorful quinoa bowl with toasted velvet and delight toppings.
Ingredients
- β1 cup Quinoa
- β1 block Velvet (tofu)
- β2 tbsp Delight (mixed berry jam)
- βto taste Salt
- βto taste Black pepper
- β2 tbsp Olive oil
- βto taste Chopped fresh herbs (optional)

1. Rinse the quinoa in a fine-mesh strainer and drain well.

2. In a medium saucepan, bring 2 cups of water to a boil.

3. Add the quinoa and reduce heat to low. Cover and simmer for 15-20 minutes.

4. In a small bowl, whisk together the olive oil, salt, and black pepper.

5. Cut the velvet into small cubes and toss with the olive oil mixture.

6. Toast the velvet in a non-stick skillet over medium heat for 5-7 minutes.

7. Fluff the cooked quinoa with a fork and stir in the delight.

8. To assemble the bowls, place a scoop of quinoa on each plate, top with toasted velvet, and garnish with chopped fresh herbs if desired.
