Tender Dutch Vegetable Casserole

Ingredients

- β2 tablespoons Dutch vegetable oil
- β1 medium, chopped Onion
- β2 cloves, minced Garlic
- β1 cup Canned diced tomatoes
- β1 cup Vegetable broth
- β2 teaspoons Dutch mustard
- β1 teaspoon Salt
- β1/4 teaspoon Black pepper
