Uplifting Chicken Enchiladas
A delicious and comforting Mexican dish filled with tender chicken, wrapped in tortillas and smothered in a rich and creamy sauce.
Ingredients
- ●1 lb Chicken breastboneless and skinless
- ●6-8 Tortillascorn or flour
- ●2 cups Enchilada saucehomemade or store-bought
- ●1 cup Shredded cheesecheddar or Monterey Jack
- ●1 medium Diced onionchopped
- ●1 medium Diced bell pepperchopped
- ●1 medium Diced tomatochopped
- ●1 tsp Cuminground
- ●1 tsp Paprikaground
- ●1 tsp Saltto taste
- ●1 tsp Black pepperto taste

Preheat oven to 375°F (190°C).

Cook the chicken breast in a skillet over medium-high heat until browned and cooked through.

Shred the cooked chicken into bite-sized pieces.

In a large skillet, sauté the diced onion, bell pepper, and tomato until softened.

Add the cumin, paprika, salt, and black pepper to the skillet and stir to combine.

Add the enchilada sauce to the skillet and stir to combine.

In a large baking dish, spread a layer of enchilada sauce on the bottom.

Arrange 2-3 tortillas on a flat surface and spoon some of the chicken mixture onto the center of each tortilla.

Sprinkle shredded cheese over the chicken mixture.

Roll up the tortillas and place them seam-side down in the baking dish.

Repeat the process with the remaining tortillas and chicken mixture.

Pour the remaining enchilada sauce over the top of the rolled tortillas.

Cover the baking dish with aluminum foil and bake for 25 minutes.

Remove the foil and sprinkle shredded cheese over the top of the enchiladas.

Return the baking dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
