German Potato Dumplings (Kartoffelklöße)
A classic German side dish made from grated potatoes and flour, boiled and served with butter or topped with a fried egg.
Ingredients

- ●1/2 cup flourall-purpose flour
- ●1 tsp germandried parsley
- ●1 tsp upliftingdried chives
- ●to taste salt
- ●as needed water
Instructions

Boil the potatoes in a large pot of salted water until tender.

Drain the potatoes and mash in a large bowl with a fork.

Add the flour, parsley, chives, and salt to the potatoes and mix until a dough forms.

Knead the dough for 5-7 minutes until smooth.

Divide the dough into 8 equal pieces and roll each piece into a ball.

Boil the dumplings in a large pot of salted water for 10-12 minutes, or until they float to the surface.

Drain the dumplings and serve with melted butter or topped with a fried egg.
