Ethiopian Chicken Curry
A flavorful and aromatic curry dish from Ethiopia, made with tender chicken, spices, and a blend of herbs.
Ingredients

- β2 teaspoons curry powderuse a high-quality Ethiopian curry powder

- β1 medium onionfinely chopped
- β2 inches gingergrated
- β3 cloves garlicminced
- β1 cup chicken brothlow-sodium
- β1 cup heavy creamoptional
- β1 teaspoon uplifting spicesa blend of paprika, cumin, and coriander

Heat the olive oil in a large pan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the grated ginger and minced garlic and cook for another minute.

Add the chicken breast pieces and cook until browned on all sides, about 5-7 minutes.

Add the curry powder, uplifting spices, and chicken broth to the pan, stirring to combine.

Bring the mixture to a simmer and cook for 15-20 minutes, or until the chicken is cooked through.

Add the heavy cream (if using) and stir to combine. Let simmer for another 5 minutes.
