Bitter Russian Tagine
A unique Indian dish that combines the flavors of Russia with the traditional tagine cooking method. The bitter notes from the vegetables add a fascinating twist to this meaty stew.
Ingredients

- β3 cloves GarlicMinced
- β2-inch piece GingerGrated
- β1 medium Bitter GourdSliced
- β1 teaspoon Russian Caraway SeedsToasted
- β1 teaspoon CuminGround
- β1 teaspoon CorianderGround
- β2 tablespoons Tomato Paste
- β2 cups Water
- β1 teaspoon Salt
- β1/2 teaspoon Black Pepper

Heat oil in a large Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger and cook for 1 minute.

Add the beef and cook until browned, about 5 minutes.

Add the bitter gourd, caraway seeds, cumin, coriander, tomato paste, salt, and pepper. Stir to combine.

Reduce the heat to low and simmer, covered, for 1 1/2 hours.
