Bubble and Squeak with Pumpkin Mash
A traditional British dish, Bubble and Squeak is made with leftover potatoes and cabbage, pan-fried until crispy. In this recipe, we've added a seasonal twist by incorporating roasted pumpkin and a hint of unique spices.
Ingredients
- β1 small, peeled and cubed Pumpkin
- β2 cups, mashed Bubble and Squeak leftover potatoes
- β1 cup, shredded British cabbage
- β2 tbsp Umami broth
- βto taste Salt
- βto taste Pepper
- β2 tbsp Olive oil

1. Preheat the oven to 400Β°F (200Β°C).

2. Toss the pumpkin cubes with a drizzle of olive oil and roast in the oven for 20-25 minutes, or until tender.

3. In a large pan, heat 1 tablespoon of olive oil over medium heat.

4. Add the shredded cabbage and cook until wilted, about 5 minutes.

5. Stir in the mashed potatoes, umami broth, salt, and pepper.

6. Use a spatula to shape the mixture into patties.

7. Pan-fry the patties until crispy and golden brown, about 4-5 minutes per side.

8. Serve the Bubble and Squeak hot, topped with roasted pumpkin mash and a sprinkle of salt and pepper.
