Slovakian-Style Gluten-Free Pasta
A traditional Slovakian-inspired pasta dish made with unique gluten-free pasta, rigatoni, and a medley of vegetables.
Ingredients
- β8 oz RigatoniGluten-free
- β8 oz Unique PastaGluten-free
- β2 tbsp Vegetable oil
- β1 medium OnionChopped
- β3 cloves GarlicMince
- β2 medium CarrotsChopped
- β2 tbsp Tomato paste
- β1 cup Chicken broth
Instructions

Cook the rigatoni and unique pasta according to the package instructions.

Heat the vegetable oil in a large skillet over medium-high heat.

Add the chopped onion and cook until translucent, about 3-4 minutes.

Add the minced garlic and cook for another minute.

Add the chopped carrots and cook for 5 minutes, or until they begin to soften.

Add the tomato paste and cook for 1 minute, stirring constantly.

Add the chicken broth and bring the mixture to a simmer.

Reduce the heat to low and let it cook while the pasta is cooking.

Drain the cooked pasta and add it to the skillet with the vegetable mixture.
