Mexican Beef Stew
A hearty and flavorful stew made with tender beef and a blend of Mexican spices.
Ingredients
- β1 uniqueany type of unique pepper, such as jalapeno or serrano
- β1.5 pounds beefbeef shin or beef stew meat
- β2 cups stewbeef broth or stock
- β1/4 cup syrianolive oil, used for cooking
- β1 teaspoon saltuse as needed
- β1/2 teaspoon black pepperuse as needed
- β1 teaspoon cuminuse as needed
- β1 teaspoon chili powderuse as needed
- β3 cloves garlicminced, use as needed
- β1 medium onionchopped, use as needed

Heat the Syrian olive oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside.

Add the garlic and onion to the pot and cook until softened, about 5 minutes.

Add the stew, cumin, chili powder, salt, and black pepper to the pot.

Stir to combine and bring to a boil.

Return the beef to the pot and reduce heat to low.

Simmer, covered, for 2 1/2 to 3 hours, or until the beef is tender.
