Beef Stew Venezolano
A hearty, comforting beef stew inspired by the flavors of Venezuela. This rich and flavorful dish is perfect for a cold winter's night.
Ingredients
- β1 pound beef stew meatcut into 1 1/2-inch cubes
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons tomato pastecrushed
- β2 cups chicken brothlow sodium
- β1 cup red winered wine vinegar as substitute
- β2 teaspoons ground cumindried
- β1 teaspoon cayenne pepperground
- β1 teaspoon saltkosher
- β1/2 teaspoon black pepperfreshly ground

Heat oil in a large Dutch oven over medium-high heat.

Brown beef in batches until browned on all sides, about 5 minutes per batch.

Remove browned beef from pot; set aside.

Reduce heat to medium; add onion to pot and cook until softened, about 5 minutes.

Add garlic, tomato paste, cumin, cayenne pepper, salt, and black pepper to pot; cook for 1 minute.

Add red wine, chicken broth, and browned beef to pot; bring to a boil.

Return browned beef to pot; cover and transfer to oven.

Bake at 300 for 2 1/2 hours or until beef is tender.
