Uruguayan Yautia Stew
A hearty and comforting stew made with yautia, a staple root vegetable in Uruguay. This dish is perfect for a cold winter night.
Ingredients
- β2 large yautiapeeled and cubed
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons olive oil
- β2 tablespoons tomato paste
- β2 cups chicken broth
- β1 teaspoon unique pepper

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the cubed yautia and cook for 5 minutes, until slightly tender.

Add the tomato paste, chicken broth, unique pepper, salt, and black pepper.
