Vietnamese Tofu Noodle Soup
A light and refreshing Vietnamese-inspired noodle soup made with crispy tofu and unique noodles. Perfect for a quick and easy meal.
Ingredients
- β1 block, drained and cubed firm tofu
- β1 cup unique noodles
- β1 cup, chopped crisp vietnamese spring rolls
- β4 cups vegetable broth
- β2 tablespoons soy sauce
- β1 tablespoon fish sauce
- β1 tablespoon sugar
- β2 tablespoons lime juice
- β1/4 cup chopped cilantro
Instructions

Cook the noodles according to the package instructions.

In a large pot, combine the vegetable broth, soy sauce, fish sauce, and sugar. Bring to a simmer.

Add the cubed tofu to the pot and cook for 5 minutes.

Add the chopped spring rolls to the pot and cook for an additional 2 minutes.

Stir in the lime juice and cook for 1 minute.
