Classic Indian Kheer
A traditional Indian dessert made with milk, rice, and sugar. This creamy pudding is flavored with cardamom and nuts.
Ingredients
- β2 cups Milk
- β1 cup Riceshort-grain rice
- β2 tbsp Butteryunsalted butter
- β1 cup Kheerkheer or rice vermicelli
- β1 cup Sugargranulated sugar
- β1/4 tsp Cardamomground cardamom
- β1/4 cup Chopped nutsoptional
Instructions

Rinse the rice and soak it in water for 30 minutes. Drain and set aside.

In a large saucepan, combine the milk, rice, and sugar. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture comes to a boil.

Reduce the heat to low and simmer, covered, for 15-20 minutes or until the rice is cooked and the mixture thickens.

Add the butter, cardamom, and kheer to the saucepan. Cook for an additional 2-3 minutes, stirring constantly.

Remove the saucepan from the heat and let it cool slightly.

Stir in the chopped nuts, if using.

Transfer the kheer to individual serving cups or a large serving dish.

Chill in the refrigerator for at least 2 hours before serving.

Serve the kheer cold, garnished with additional chopped nuts, if desired.
