Creamy Risotto with Umami Cabbage
A rich and savory risotto dish featuring umami flavors from cabbage and Italian seasonings.
Ingredients
- β1 cup Risotto Arborio
- β1/2 cup CabbageFinely chopped
- β2 tsp Umami Paste
- β1/2 tsp Italian Seasoning
- β1/4 cup Parmesan Cheese
- β1/2 cup White Wine
- β2 cups Vegetable Broth
- β2 tbsp Butter
- β1/4 tsp Salt
- β1/8 tsp Black Pepper

Heat the butter in a large skillet over medium heat.

Add the Italian seasoning and cook for 1 minute, stirring constantly.

Add the chopped cabbage and cook until softened, about 3-4 minutes.

Add the Umami paste and cook for an additional minute.

Add the Arborio rice and cook for 1-2 minutes, stirring constantly.

Add the white wine and cook until the liquid is almost completely absorbed, stirring frequently.

Add 1/2 cup of the vegetable broth to the rice and cook, stirring constantly, until the liquid is mostly absorbed.

Repeat the process of adding the broth in 1/2 cup increments, stirring constantly and allowing each portion to absorb before adding the next.

After 20-25 minutes of cooking, the rice should be tender and creamy.
