Spicy Satay with Kippers
A fusion of Thai and British flavors in this spicy, indulgent satay dish featuring kippers.
Ingredients
- β4 KippersSmoked kipper fillets
- β1/2 cup Coconut milkFull-fat coconut milk
- β2 tablespoons Peanut oilFor satay skewers
- β2 tablespoons Thai red curry pasteFor marinade
- β1 tablespoon Fish sauceOptional, or substitute with soy sauce
- β1 tablespoon Brown sugarFor marinade
- β2 tablespoons Lime juiceFreshly squeezed
- β1 teaspoon Chili flakesOptional, for extra spice
- β1/4 cup Fresh cilantroChopped, for garnish
- β10-12 Satay sticksFor serving

1. Preheat grill to medium-high heat.

2. Cut kipper fillets into 1-inch pieces.

3. In a blender or food processor, combine Thai red curry paste, fish sauce (if using), brown sugar, lime juice, and chili flakes (if using). Blend until smooth.

4. In a large bowl, combine blended marinade, kipper pieces, and coconut milk. Mix well to coat.

5. Cover bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

6. Thread kipper pieces onto satay sticks, leaving a small space between each piece.
