Traditional Saudi Lamb Tagine
A hearty and aromatic dish from Saudi Arabia, made with tender lamb and a rich blend of spices.
Ingredients
- β1 1/2 pounds Lamb shoulder
- β2 cups Umami-rich beef broth
- β2 tablespoons Rich olive oil
- β2 tablespoons Saudi-inspired spice blend
- β1 medium Onion
- β3 cloves Garlic
- β1 TagineTraditional clay pot or substitute with a Dutch oven
- β1/4 cup Fresh parsley
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

1. Heat the olive oil in the tagine or Dutch oven over medium heat.

2. Add the onion and cook until softened, about 5 minutes.

3. Add the garlic and cook for an additional 1 minute.

4. Add the lamb shoulder and cook until browned on all sides, about 5 minutes.

5. Add the beef broth, spice blend, salt, and pepper. Stir to combine.

6. Bring the mixture to a boil, then cover the tagine and transfer to the oven.

7. Braise the lamb for 2 1/2 hours, or until tender and easily shredded with a fork.
