Crunchy Jamaican Salad Bites
A quick and easy snack that combines the flavors of Jamaica with the crunch of fresh vegetables.
Ingredients
- β1 cup, peeled and grated Carrots
- β1 cup, sliced Cucumber
- β2 tsp Jamaican Jerk Seasoningstore-bought or homemade
- β1/2 cup, shredded Cheddar Cheese
- β1/4 cup, crushed Crunchy Corn Flakes
- β2 tbsp Salad Dressingstore-bought or homemade
- β1 tsp Umami Soy Sauce
- β1 tsp Vegetable Oil
- βto taste Salt

Preheat oven to 375Β°F (190Β°C).

In a large bowl, mix together grated carrots, sliced cucumber, Jamaican Jerk Seasoning, and shredded Cheddar Cheese.

In a small bowl, mix together crushed Corn Flakes and Vegetable Oil.

Add the Corn Flake mixture to the carrot mixture and stir until well combined.

Transfer the mixture to a mini muffin tin.

Drizzle with Salad Dressing and Umami Soy Sauce.

Bake for 12-15 minutes or until the tops are lightly browned.

Remove from oven and sprinkle with Salt to taste.
