Quang Mi Noodle Curry

Ingredients
- β8 oz ultra dense noodlespreferably freshly made
- β1 cup quang mifinely chopped
- β1 medium onionthinly sliced
- β3 cloves garlicminced
- β2 inches gingergrated
- β1 can coconut milkfull-fat
- β1 tsp curry powderadjust to taste
- β1 tsp turmericadjust to taste
- β1 tsp saltadjust to taste
- β1/4 tsp cayenne pepperoptional

Heat oil in a pan over medium heat.

Add onion and cook until translucent.

Add garlic and ginger and cook for 1 minute.

Add curry powder, turmeric, salt, and cayenne pepper (if using). Cook for 1 minute.

Add coconut milk and bring to a simmer.

Add noodles and mi. Cook for 5-7 minutes or until the noodles are cooked through.
