Thai Tom Kha Soup
A spicy and sour Thai soup made with coconut milk, lemongrass, and your choice of protein. Serve with steamed rice or noodles for a delicious and filling meal.
Ingredients

- β2 tablespoons tom kha paste
- β2 cups coconut milk
- β2 stalks lemongrassbruised
- β2 tablespoons fish sauce
- β1 tablespoon sugar
- β4 cups chicken broth
- β2 limesjuiced
- β2 chili pepperssliced

Heat 2 tablespoons of oil in a large pot over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Add the tom kha paste and cook for 1 minute, until fragrant.

Pour in the coconut milk and chicken broth, and bring to a boil.

Reduce the heat to medium-low and simmer for 10 minutes.
