Peruvian Beef Stew
A hearty, keto-friendly beef stew with a Peruvian twist, featuring tender beef and sweet beetroot.

Heat the olive oil in a large Dutch oven over medium-high heat.

Brown the beef on all sides, in batches if necessary, until browned and cooked to your liking. Set aside.

Reduce heat to medium and add the diced onion, sautéing until translucent.

Add the minced garlic and cook for an additional minute.

Add the diced beetroot, Peruvian stew spice mix, and tomato paste to the pot. Stir to combine.
