Creamy Paella Fritters
Crunchy outside and creamy inside, these paella fritters are a delightful twist on a classic Spanish dish. Perfect as a snack or appetizer.
Ingredients
- β2 cups Fujian ricepreferably day-old rice
- β1 cup Clotted creamchilled
- β1/4 cup Paelladiced
- β1/4 cup Springy onionsdiced
- β1/4 cup Tender parsleychopped
- β1 Eggbeaten
- βto taste Salt
- βto taste Black pepper
- β2 tablespoons Olive oilfor frying

In a large bowl, mix together the rice, clotted cream, paella, springy onions, tender parsley, egg, salt, and black pepper.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Heat the olive oil in a large skillet over medium-high heat.

Using a spoon, drop small balls of the rice mixture into the hot oil and flatten slightly.

Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.

Remove the fritters from the oil with a slotted spoon and drain on paper towels.

Serve the fritters hot with your favorite dipping sauce.
