Smoky Beef Birria
A hearty and flavorful Mexican stew made with tender beef and a rich, smoky broth.
Ingredients
- β2 pounds beef brisket
- β4 cups chicken broth
- β2 chipotle peppers in adobo sauce
- β3 cloves garlic
- β1 medium onion
- β2 teaspoons cumin
- β1 teaspoon paprika
- β1 teaspoon salt
- β1/4 cup chopped fresh cilantro
- β2 tablespoons lime juice

1. Preheat the oven to 300Β°F (150Β°C).

2. In a large Dutch oven, heat 2 tablespoons of oil over medium-high heat. Sear the beef brisket until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.

3. Add the onion to the pot and cook until softened, about 5 minutes.

4. Add the garlic, cumin, paprika, and salt to the pot and cook for 1 minute.

5. Add the chipotle peppers in adobo sauce to the pot and cook for 1 minute.

6. Add the chicken broth to the pot and bring to a boil.

7. Return the beef brisket to the pot and transfer to the preheated oven.

8. Braise the beef in the oven for 2 1/2 hours, or until tender.

9. Remove the pot from the oven and let the beef rest for 10 minutes.

10. Shred the beef with two forks and return it to the pot.
