Chwinamul Tagine with Eastern Flair
A delicious and aromatic tagine dish from the Eastern Mediterranean, featuring tender and roasted chwinamul, a classic Middle Eastern ingredient.
Ingredients
- β2 cups Roasted chwinamulchopped
- β1 cup Tender chwinamul stemschopped
- β2 teaspoons Middle eastern spicesmix of cumin, coriander, and turmeric
- β2 tablespoons Eastern olive oilfor frying
- β3 cloves Garlicminced
- β1 medium Onionchopped
- β1/4 cup Chopped fresh parsleyfor garnish

Heat the olive oil in a large pot over medium heat.

Add the minced garlic and cook until fragrant, about 1 minute.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the roasted and tender chwinamul, along with the Middle Eastern spices, and stir to combine.

Add 2 cups of water and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes, or until the chwinamul is tender.
