Braised Cherry Pork Chops
Tender pork chops in a rich cherry sauce, served with stewed portuguese vegetables.
Ingredients
- ●4 pieces Pork Chops1 inch thick
- ●2 tablespoons Cherry Jam
- ●1 cup Portuguese Red Wine
- ●2 tablespoons Olive Oil
- ●1 medium Onionchopped
- ●3 cloves Garlicminced
- ●1 cup Stewed Vegetables (Portuguese)homemade or store-bought
- ●1 teaspoon Salt
- ●1/2 teaspoon Black Pepper
Instructions

Preheat the oven to 300°F (150°C).

Season the pork chops with salt and black pepper.

Heat the olive oil in a large skillet over medium-high heat.

Sear the pork chops for 2-3 minutes on each side, then transfer to a baking dish.

Add the chopped onion to the skillet and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the cherry jam and portuguese red wine to the skillet, stirring to combine.

Pour the sauce over the pork chops in the baking dish.

Add the stewed portuguese vegetables to the baking dish.

Cover the dish with aluminum foil and bake for 20 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
