Australian Bolognese Pappardelle
A hearty Italian-inspired pasta dish featuring Australian beef in a rich tomato sauce, served with tender pappardelle.
Ingredients
- β12 oz pappardelle
- β1 lb Australian beef mince
- β1 medium onion
- β3 cloves garlic
- β28 oz canned crushed tomatoes
- β1 cup red wine
- β2 tbsp tomato paste
- β2 cups beef broth
- β1 tsp salt
- β1 tsp black pepper

Bring a large pot of salted water to a boil. Cook the pappardelle according to the package instructions until al dente.

In a large skillet, heat 2 tablespoons of oil over medium-high heat. Add the beef mince and cook, breaking it up with a spoon, until browned, about 5 minutes.

Add the onion and garlic to the skillet and cook until the onion is translucent, about 5 minutes.

Add the crushed tomatoes, red wine, tomato paste, and beef broth to the skillet. Stir to combine.

Bring the sauce to a simmer and cook, stirring occasionally, until the sauce has thickened and the flavors have melded together, about 20 minutes.

Season the sauce with salt and black pepper to taste.

Drain the cooked pappardelle and add it to the skillet with the sauce. Toss to combine.
