Thai Collard Green Stir Fry
A flavorful and nutritious Thai-inspired stir fry made with tender collard greens and australian beef, served over a bed of mixed greens salad.
Ingredients
- β1 pound, sliced Australian beefthinly sliced for stir frying
- β1 bunch, chopped Collard greensstems removed and discarded
- β4 cups Mixed greens saladfor serving
- β2 tablespoons Thai red curry pastestore-bought or homemade
- β2 tablespoons Coconut oilfor stir frying
- β1 tablespoon Fish sauceoptional, for added umami flavor
- β2 tablespoons Lime juicefreshly squeezed
- β1-2, sliced Chili peppersoptional, for added heat

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

Add the sliced beef and cook until browned, about 3-4 minutes.

Remove the beef from the skillet and set aside.

Add the remaining 1 tablespoon of coconut oil to the skillet.

Add the chopped collard greens and cook until wilted, about 3-4 minutes.

Add the Thai red curry paste and cook for 1 minute, stirring constantly.

Return the cooked beef to the skillet and stir to combine with the greens and curry paste.

Season with fish sauce, if using, and lime juice.

Serve the stir fry over a bed of mixed greens salad.
