Mexican Lamb Tagine
A flavorful and aromatic twist on the traditional Moroccan tagine, made with tender lamb and inspired by the bold flavors of Mexico.
Ingredients
- β1 1/2 pounds Lamb shoulder
- β1/4 cup Tender olives
- β2 tablespoons Algerian preserved lemon
- β1 teaspoon Mexican oregano
- β1 tablespoon Ginger
- β3 cloves Garlic
- β1 teaspoon Cumin
- β1/4 teaspoon Cayenne pepper
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Preheat oven to 300Β°F (150Β°C).

In a large Dutch oven, heat 2 tablespoons of oil over medium heat.

Add the onions and cook until softened, about 5 minutes.

Add the ginger and garlic and cook for 1 minute.

Add the lamb and cook until browned on all sides, about 5 minutes.

Add the cumin, coriander, cayenne pepper, salt, and black pepper. Stir to combine.

Add the preserved lemon and olives. Stir to combine.

Cover the pot and transfer to the preheated oven.

Braise the lamb for 2 1/2 to 3 hours, or until tender and falling apart.

Serve hot, garnished with fresh cilantro and crusty bread.
