Spicy Korean Tofu Bowl
A flavorful and spicy Korean-inspired dish made with crispy tofu, crunchy vegetables, and a savory sauce, served in a steaming hot bowl.
Ingredients
- β1 block (14 oz) firm tofupressed and drained
- β2 tsp Korean chili flakes (gochugaru)adjust to taste
- β2 tbsp soy sauce
- β1 tsp brown sugar
- β1 tsp rice vinegar
- β2 tbsp vegetable oil
- β1 cup sliced carrots
- β1 cup sliced cucumber
- β1/4 cup chopped green onions
- β1 cup cooked white ricefor serving

1. Cut the tofu into bite-sized cubes and coat with a mixture of 1 tsp soy sauce, 1 tsp brown sugar, and 1 tsp rice vinegar. Let marinate for at least 15 minutes.

2. In a large skillet or wok, heat 1 tbsp vegetable oil over medium-high heat.

3. Add the tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes.

4. Add the sliced carrots and cucumber to the skillet and cook until they start to soften, about 3-4 minutes.

5. In a small bowl, whisk together 1 tbsp soy sauce, 2 tsp Korean chili flakes, and 2 tbsp water.

6. Pour the sauce over the vegetables and tofu, and stir-fry until the sauce has thickened and the vegetables are tender.

7. Stir in chopped green onions and cook for an additional 1-2 minutes.

8. Serve the spicy tofu mixture over a bed of cooked white rice in a steaming hot bowl.
