Vegan Pak Choi Stir Fry
A simple and flavorful vegan stir fry made with pak choi and served with a side of fried rice.

- β1 bunch Pak Choi
- β2 cups Fried Rice
- β2 medium Tasty Tomatoesdiced
- β2 tbsp Canadian Canola Oil
- βto taste Salt
- β2 tbsp Chopped Green Onions

Instructions

Heat 1 tbsp of canola oil in a large skillet or wok over medium-high heat.

Add the diced tomatoes and cook for 2-3 minutes, or until they start to soften.

Add the pak choi to the skillet and cook for 2-3 minutes, or until it starts to wilt.

Stir in the fried rice and cook for an additional 1-2 minutes, or until the rice is heated through.
