Tantalizing Greek Eggplant Casserole
A flavorful, hearty casserole that combines the best of Greek cuisine with the depth of roasted eggplant.
Ingredients

- β1 cup Casserolestore-bought or homemade
- β1 cup Feta cheesecrumbled
- β2 cups Tomatoesfresh or canned, halved
- β2 tbsp Olive oilfor brushing eggplant
- β Salt and pepper
