Uruguayan Lamb Stew
A hearty, gluten-free lamb stew from Uruguay, perfect for a cold night. This dish is rich in flavor and nutrients.
Ingredients
- β1 1/2 pounds Lamb shouldercut into 2-inch cubes
- β1 large Onionchopped
- β3 cloves Garlicminced
- β1 cup Red winedry
- β2 cups Beef brothgluten-free
- β2 tablespoons Tomato pastedried
- β2 tablespoons Tangy BBQ saucegluten-free
- β1 teaspoon Uruguayan oregano
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Heat oil in a large Dutch oven over medium-high heat. Add lamb and cook until browned, about 5 minutes.

Remove lamb from pot and set aside. Add onion and garlic and cook until onion is translucent.

Add red wine and beef broth to pot, scraping up browned bits. Bring to a boil.

Add tomato paste and cook for 1 minute. Stir to combine.

Return lamb to pot and add BBQ sauce, oregano, salt, and pepper. Stir to combine.

Bring to a boil, then cover and transfer to the oven. Braise for 2 1/2 hours, or until lamb is tender.

Remove from oven and let rest for 10 minutes before serving.

Serve hot, garnished with chopped fresh parsley or oregano.
