Syrian Lentil Stew
A hearty and flavorful stew originating from Syria, made with red lentils and a blend of aromatic spices.
Ingredients
- β1 cup Red lentilsRinsed and drained
- β2 tablespoons Tangy tomato pasteHomemade or store-bought
- β1 teaspoon Syrian allspiceGround
- β1 medium Fry onionsChopped
- β1-inch piece GingerGrated
- β3 cloves GarlicMinced
- β1 teaspoon SaltTo taste
- β1/2 teaspoon Black pepperTo taste
- β4 cups WaterVegetable or chicken broth
- β1/4 cup Fresh parsleyChopped (optional)

Heat oil in a large pot over medium-high heat.

Add the chopped onions and cook until they start to brown.

Add the grated ginger and minced garlic and cook for 1 minute.

Add the ground Syrian allspice and cook for 1 minute.

Add the red lentils, tomato paste, salt, and black pepper. Cook for 1 minute.

Add the water or broth and bring to a boil.

Reduce the heat to low and simmer, covered, for 30-40 minutes or until the lentils are tender.
