Greek Cauliflower Fritters
A crispy and flavorful side dish made with roasted cauliflower and tangy fritters. Perfect as a snack or appetizer.
Ingredients
- β1 head Cauliflower
- β1/2 cup Greek yogurt
- β1 cup Tangy fritters
- β1/2 cup Roasted red pepper
- β2 cloves Garlic
- βto taste Salt
- βto taste Black pepper

Preheat oven to 400Β°F (200Β°C).

Pulse cauliflower in a food processor until it resembles rice.

In a large bowl, combine cauliflower, Greek yogurt, tangy fritters, roasted red pepper, garlic, salt, and black pepper. Mix well.

Using a 1/4 cup measuring cup, scoop the mixture into balls and flatten slightly into patties.

Heat 1/2 inch (1 cm) of olive oil in a large non-stick skillet over medium heat. Add the patties and cook for 3-4 minutes on each side, until golden brown and crispy.

Transfer the fritters to a baking sheet and bake for an additional 5-7 minutes, until cooked through.
