Thai Crispy Sweet Potato Fritters
Crispy on the outside, sweet and fluffy on the inside, these Thai-inspired sweet potato fritters are a delicious snack or side dish.
Ingredients
- β2 large sweet potatoespeeled and grated
- β1/4 cup portuguese crumblefor added crunch
- β1/4 cup tangy mayonnaisefor serving
- β1/2 cup all-purpose flourfor dusting
- β1/4 cup crispy fried onionsfor garnish
- β1/2 cup vegetable oilfor frying
- β saltto taste
- β black pepperto taste

1. In a large bowl, combine grated sweet potatoes, flour, and salt. Mix well.

2. Divide the mixture into 8 equal parts and shape each part into a ball.

3. Flatten each ball slightly into a disk shape.

4. Heat about 1/2 inch of vegetable oil in a large non-stick skillet over medium-high heat.

5. When the oil is hot, add 4 fritters to the skillet (do not overcrowd).

6. Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.

7. Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

8. Repeat the cooking process with the remaining 4 fritters.

9. Serve the fritters hot with tangy mayonnaise and crispy fried onions on top.
