Sweet Portuguese Seed Stir Fry
A delicious and unique stir fry dish that combines the flavors of Portugal with the crunch of seeds.
Ingredients
- β2 tablespoons Poppy seeds
- β2 tablespoons Coconut oilfor stir-frying
- β1/4 cup Sweet stir-fry saucestore-bought or homemade
- β1 large Red bell pepperdiced
- β1 medium Oniondiced
- β2 medium Sweet potatoesdiced
- βto taste Salt
- βto taste Black pepper
Instructions

Heat the coconut oil in a large skillet or wok over medium-high heat.

Add the diced onion and red bell pepper and stir-fry until tender.

Add the diced sweet potatoes and stir-fry for an additional 2-3 minutes.

In a small bowl, whisk together the sweet stir-fry sauce and a pinch of salt and black pepper.

Add the sauce to the skillet and stir-fry for an additional 1-2 minutes, until the sweet potatoes are coated.

Sprinkle the poppy seeds over the top and stir-fry for an additional 30 seconds.
