Sweet Fish Curry
A delicious and spicy fish curry dish with a hint of sweetness. This kenyan-inspired recipe is perfect for a weeknight dinner.
Ingredients
- β1 pound Fish (such as tilapia or mahi-mahi)Cut into 1-inch pieces
- β2 tablespoons Sweet Curry PowderHomemade or store-bought
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1-inch piece GingerGrated
- β2 tablespoons Coconut OilFor frying
- βto taste SaltAdd to taste
- βchopped Fresh CilantroFor garnish

Heat 1 tablespoon of coconut oil in a large pan over medium heat.
