Japanese Corn Fritters
Crispy corn fritters served with a side of tangy dipping sauce.
Ingredients
- β1 cup cornmeal
- β1 cup, frozen, thawed sweet corn
- β1/2 cup, kernels juicy corn
- β1 cup, cubed Russian sweet bread
- β1/2 cup flour
- β2 and eggs
- β1 tablespoon Japanese soy sauce
- β1 tablespoon rice vinegar
- β1/4 cup water
- β2 tablespoons stir-fry oil
- βvegetable oil for frying fry

1. In a large bowl, whisk together cornmeal, flour, eggs, soy sauce, rice vinegar, and water.

2. Add the cubed sweet bread and stir until the mixture is well combined.

3. Stir in the thawed corn and kernels.

4. Heat about 1 inch of vegetable oil in a deep frying pan over medium-high heat.

5. Using a 1/4 cup measuring cup, scoop the corn mixture into the hot oil.

6. Flatten the mixture slightly with a spatula and fry for 3-4 minutes on each side, until golden brown.

7. Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

8. Serve the fritters hot with your favorite dipping sauce.
