Spicy Vietnamese-Style Barramundi Stir Fry
A vegan twist on a classic Vietnamese dish, this spicy stir fry features pan-seared barramundi and a medley of colorful vegetables.
Ingredients

- ●1 Red bell pepper
- ●1/2 Red onion
- ●1 cup Mushrooms
- ●1 cup Snow peas
- ●2 tablespoons Vegan stir-fry sauce
- ●2 teaspoons Sambal oelek
- ●2 tablespoons Lime juice
- ●1/4 cup Fresh cilantro

Heat a non-stick pan over medium-high heat.

Season the barramundi fillets with salt and pepper.

Add a small amount of oil to the pan and sear the barramundi for 3-4 minutes on each side.

Remove the barramundi from the pan and set aside.

In the same pan, add more oil if necessary, and sauté the red bell pepper and red onion until tender.

Add the mushrooms and snow peas to the pan and cook until the vegetables are tender.
