Spicy Crumble Tofu Scramble
A twist on traditional scrambled eggs, made with tofu, potatoes, and a spicy kick.
Ingredients
- ●1 block, drained and crumbled tofu
- ●1 large, peeled and diced potato
- ●1/2 teaspoon cayenne pepper spicy
- ● scrambled1 tablespoon olive oil
- ●1/4 cup, for topping crumble
Instructions

Preheat oven to 375°F (190°C).

In a pan, heat the olive oil over medium-high heat. Add the diced potatoes and cook until browned, about 5 minutes.

Add the crumbled tofu to the pan and cook until lightly browned, about 3-4 minutes.

Add the cayenne pepper to the pan and stir to combine.

Transfer the pan to the preheated oven and bake for 10-12 minutes, or until the tofu is set.

While the tofu is baking, prepare the crumble topping by mixing together your desired spices and crumb ingredients.

Remove the pan from the oven and top with the crumble mixture.

Return the pan to the oven and bake for an additional 2-3 minutes, or until the crumble is golden brown.
