Spicy Braised Cabbage with Syrian Flair

Ingredients
- β1 head, sliced napa cabbageany variety works
- β1 tsp ground cumin spicyadjust to taste
- β2 cloves garlic, minced festiveoptional
- β1 tsp sumac syrianoptional
- β1/4 cup chopped fresh parsley cabbagegarnish
- β2 tbsp olive oil braiseuse a good quality oil
- β1 tsp saltto taste

Heat the oil in a large Dutch oven over medium heat.

Add the garlic and cook, stirring occasionally, until fragrant, about 2 minutes.

Add the cumin and cook for 1 minute, stirring constantly.

Add the sliced cabbage and cook, stirring occasionally, until it begins to soften, about 5 minutes.

Add the sumac and salt. Stir to combine.

Cover the pot and continue cooking, stirring occasionally, until the cabbage is tender and caramelized, about 20 minutes.
