Irish Pork Belly Gratin
Tender pork belly in a spicy Irish-inspired gratin, perfect for a comforting dinner.
Ingredients
- β2 pounds pork belly
- β1 cup, shredded spicy irish cheese blend
- β1 medium, thinly sliced onion
- β3 cloves, minced garlic
- β2 tablespoons all-purpose flour
- β2 tablespoons butter
- β1 cup chicken broth
- β1/2 cup heavy cream

Preheat the oven to 400Β°F (200Β°C).

Season the pork belly with salt and black pepper.

In a large skillet, cook the sliced onion over medium heat until caramelized.

Add the minced garlic and cook for 1 minute.

In a small bowl, whisk together the flour and a pinch of salt. Add the butter and mix until a paste forms.

Add the flour butter paste to the skillet with the onion and garlic. Cook for 1 minute.

Add the shredded cheese to the skillet and stir until melted.

Add the chicken broth and heavy cream to the skillet, whisking continuously.

Transfer the pork belly to a 9x13 inch baking dish and spoon the onion and cheese mixture over the top.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the pork is cooked through.
