Chicken Biryani
A spicy Indian-inspired dish made with marinated chicken and layered rice.
Ingredients
- β1 pound Boneless chicken breastcut into 1-inch pieces
- β2 cups Basmati riceuncooked
- β2 tablespoons Spice mix (garam masala, cumin, coriander)
- β1 medium Red onionchopped
- β1/4 cup Cilantrochopped
- β2 tablespoons Ghee or vegetable oil
- βto taste Salt
- β2 cups Water
- β1 teaspoon Biryani masala
- β2 tablespoons Lime juice

Heat oil in a large saucepan over medium-high heat.

Add the chopped onion and cook until lightly browned, about 5 minutes.

Add the spice mix and cook for 1 minute.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Add the biryani masala and cook for 1 minute.

Add 1 cup of water and bring to a boil.

Reduce heat to low, cover, and simmer for 10-12 minutes or until the chicken is cooked through.

While the chicken is cooking, prepare the rice by rinsing it in cold water and draining well.

In a large saucepan, combine the rice and 2 cups of water.

Bring to a boil, reduce heat to low, cover, and simmer for 10-12 minutes or until the rice is cooked and fluffy.

To assemble the biryani, place a layer of rice in a large serving dish, followed by a layer of chicken mixture.

Repeat this process until all the ingredients are used up, finishing with a layer of rice on top.

Garnish with chopped cilantro and serve hot.
