Mexican Nduja Empanadas
A spicy twist on traditional empanadas, filled with Nduja sausage and wrapped in crispy pastry.
Ingredients
- β1/2 pound Nduja sausagespicy Italian sausage
- β1 package Pastry doughhomemade or store-bought
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1/4 cup Cilantrochopped
- β2 tablespoons Lime juicefreshly squeezed
- βto taste Saltoptional
- βto taste Black pepperoptional
Instructions

Preheat oven to 375Β°F (190Β°C).

Roll out pastry dough to a thickness of 1/8 inch.

Cut out circles of dough using a cookie cutter or the rim of a glass.

In a pan over medium heat, cook the Nduja sausage until browned, breaking it up with a spoon as it cooks.

Add the chopped onion and minced garlic to the pan and cook until the onion is translucent.

Stir in chopped cilantro and cook for 1 minute.

Spoon the Nduja mixture onto one half of each dough circle, leaving a 1/2 inch border around the edges.

Fold the other half of the dough over the filling and press the edges together with a fork to seal.

Brush the tops of the empanadas with lime juice and sprinkle with salt and pepper to taste.

Place the empanadas on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
