Mexican Spicy Shrimp Stew
A flavorful and spicy stew made with shrimp, a blend of Mexican spices, and fluffy corn tortillas.
Ingredients
- β1 pound shrimppeeled and deveined
- β1 medium diced onionchopped
- β1 medium chopped bell pepperchopped
- β1 can diced tomatoes14.5 oz
- β1 tablespoon Mexican spicesdried oregano, cumin, and chili powder
- β1 teaspoon chili flakesoptional
- β4-6 fluffy corn tortillascut into small pieces
- β2 cups vegetable brothlow sodium

Heat oil in a large pot over medium-high heat.

Add the onion and bell pepper and cook until tender, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the diced tomatoes, Mexican spices, and chili flakes (if using). Cook for 1 minute.

Add the shrimp and cook until pink, about 2-3 minutes per side.

Add the vegetable broth and bring to a boil.
